"Cheesy" Veggie Casserole
This casserole is absolutely delicious! It's so cheesy flavorful, and the textures from the veggies work together perfectly!

- 1 small head of cauliflower
- 5 small-medium gold potatoes
- 2 cups (one batch) of my vegan cheese sauce
- 1/2 cup breadcrumbs
- dried parsley
Preheat your oven to 425 degrees F/220 degrees C.
Wash & chop the cauliflower and potatoes. Boil for 10 minutes or until tender. Transfer to a 7x11 inch casserole pan.
Add the cheese sauce to the pan & gently stir to combine.
Top with breadcrumbs & parsley.
Bake for 20-22 minutes or until the breadcrumbs are browned and you can see the cheese bubbling.
