Vegan Sweet Potato Casserole

Get ready to hear, “Can you send me that recipe?” again and again and again!

There was never a time in my life when I didn’t LOVE sweet potato casserole. This is because my mom’s recipe is the absolute best! It’s always a massive hit at thanksgiving, and it usually took up more than half my plate. Thankfully, it’s super easy to veganize, and it tastes exactly the same! To replace the animal products, you only need applesauce, vegan butter, and vegan evaporated milk – three ingredients that are very accessible and don’t break the bank. This casserole is super simple and super delicious!

Ingredients:

  • 2 lb. sweet potatoes
  • 3 tbsp vegan butter
  • 1/4 cup unsweetened applesauce
  • 1/3 cup vegan evaporated milk – heat regular unsweetened plant milk at a low simmer until it’s reduced by 50%
  • 1/4 cup sugar
  • 1/4 tsp vanilla
  • dash of salt & cinnamon

Topping:

  • 3 tbsp vegan butter
  • 1/4 cup sugar
  • 1/2 cup crushed cornflakes
  • 1/4 cup crushed pecans

Method:

  • Preheat your oven to 400 degrees F/200 degrees C. Lightly grease a 7×11″ casserole dish.
  • Wash, peel, and chop the sweet potatoes into small cubes. Boil until very soft.
  • While the potatoes are boiling, combine the applesauce, evaporated milk, sugar, cinnamon, and salt in a small mixing bowl.
  • Mash the potatoes. Add the vegan butter and vanilla, and stir until combined.
  • Add the applesauce mixture to the potatoes & stir until combined.
  • Transfer to the casserole dish. Bake for 20 minutes.
  • While this is baking, melt the butter for the topping & combine it with the sugar, cornflakes, and pecans.
  • Add the topping to the potatoes & bake for another 15 minutes.
