Vegan Sweet Potato Casserole
This tastes just like my mom's famous sweet potato casserole!

Sweet Potatoes
- 2 lb. sweet potatoes
- 3 tbsp vegan butter
- 1/4 cup applesauce unsweetened
- 1/3 cup vegan evaporated milk
- 1/4 cup sugar
- 1/4 tsp vanilla
- dash of salt & cinnamon
Topping
- 3 tbsp vegan butter
- 1/4 cup sugar
- 1/2 cup cornflakes crushed
- 1/4 cup pecans crushed
Preheat your oven to 400 degrees F/200 degrees C. Lightly grease a 7x11" casserole dish.
Wash, peel, and chop the sweet potatoes into small cubes. Boil until very soft.
While the potatoes are boiling, combine the applesauce, evaporated milk, sugar, cinnamon, and salt in a small mixing bowl.
Mash the potatoes. Add the vegan butter and vanilla, and stir until combined.
Add the applesauce mixture to the potatoes & stir until combined.
Transfer to the casserole dish. Bake for 20 minutes.
While this is baking, melt the butter for the topping & combine it with the sugar, cornflakes, and pecans.
Add the topping to the potatoes & bake for another 15 minutes.
Enjoy! Serve with cornbread casserole, vegan turkey, and cranberry sauce.
