Vegan Tater Tot Casserole

This casserole is one of my favorite comforting, satisfying, crowd-pleasing dinners!

Ingredients
  

  • 1 1/2 lb impossible meat
  • 1/2 yellow onion
  • 3 cloves garlic
  • 1 tbsp low sodium soy sauce
  • salt & pepper
  • 8 oz vegan cream of mushroom
  • 3 cups frozen vegetables
  • 2 cups vegan shredded cheese
  • 3 cups frozen tater tots

Instructions
 

  • Preheat oven to 425 degrees F/220 degrees C.
  • Mince the onion & garlic.
  • Start browning the impossible meat in a large skillet. Once it has started to brown, add the onion and garlic, and sauté until the meat is cooked through and the onions are translucent.
  • Transfer mixture to a 9x13 casserole dish. Add the cream of mushroom and mix until combined. Spread and flatten this mixture so it covers the bottom of the dish.
  • Add the frozen veggies, then the cheese, and top with the tater tots. Depending on how well each layer is covered, you may need to use more or less of these.
  • Bake for 45-50 minutes or until golden brown and bubbly. Enjoy!
