These are the BEST breakfast tacos!! Whenever I make anything that goes in them, I make sure to have enough leftovers to make these tacos.

  • Wash, peel, and dice the sweet potato. Pan fry in light oil or water for about 10 minutes or until soft.
  • Assemble your tacos! Top your tortillas with the cheese sauce, tofu scramble, sweet potatoes, salsa, hot sauce, and avocado. Enjoy!
