Vegan Swedish Meatballs

This recipe is comfort and nostalgia at its finest! The sauce is absolutely delicious and tastes just like the version my mom used to make!

Ingredients
  

  • 1 cup low sodium vegetable broth
  • 1 cup cream of mushroom vegan
  • 1/3 cup vegan sour cream
  • 1 tbsp low sodium soy sauce
  • 1 tbsp parsley
  • optional: 1 tbsp cornstarch + 1 tbsp water

Instructions
 

  • Add all of the ingredients to a saucepan and whisk to combine.
  • Simmer for 5-7 minutes or until it reaches your desired consistency. Depending on which brand of vegan sour cream you use, you may or may not need to add the cornstarch mixture to thicken it up.
  • Combine with your favorite cooked vegan meatballs & pasta. Enjoy & share!
