Vegan Hollandaise Sauce
This sauce is so good!! It's just as creamy and flavorful as any other hollandaise!

- 1/2 cup cashews raw, unsalted
- 1 cup water
- 1 tbsp lemon juice
- 1 tsp dijon mustard
- 1 tbsp nutritional yeast
- 1 tsp cornstarch
- 1/2 tsp onion powder
- 1/4 tsp turmeric
- 1/4 tsp paprika
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- hot sauce to taste
Soak the cashews for at least 4 hours. If you are low on time, bring them to a boil in a small saucepan, boil for 15 minutes, turn off the heat and let soak for an hour. Drain and rinse.
Add all of the ingredients (minus the hot sauce) to a blender and blend until completely smooth.
Transfer to a saucepan and heat while whisking for a few minutes, or until it reaches your desired consistency. Add water if it gets too thick.
Stir in the hot sauce. Taste and adjust flavors as needed.
Serve over an English muffin topped with vegan egg, sausage, and veggies! Enjoy & share.
