Vegan Breaded Green Beans

I have never liked green beans, but I could eat these all day long! They're perfectly crispy, delicious, and make a fantastic appetizer!

Ingredients
  

  • 1 lb green beans
  • 1 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup flour
  • 3 tbsp plant milk
  • 3 tbsp ground flaxseed +
  • 9 tbsp water

Instructions
 

  • Make the flax eggs and set aside while you prep everything else, to let thicken.
  • Preheat oven to 425 degrees F/220 degrees C. Line a baking sheet with parchment paper.
  • Trim the ends of the green beans.
  • You will need three bowls wide enough to dip the green beans in. In one bowl, combine the flax eggs, plant milk, salt, and pepper. In the second, combine the breadcrumbs and olive oil. In the third bowl, add the flour.
  • Dip the green beans in each bowl in this order: eggs, flour, eggs, breadcrumbs. Place the beans in a single layer on the baking sheet. If the flax eggs begin to dry out, add a little more milk and stir.
  • Bake for 20-25 minutes, or until the beans are golden brown (or to your liking). Dip in your favorite sauce, enjoy & share!
