Teriyaki Tofu
This sauce is, in my opinion, better than any store-bought teriyaki sauce! It's delicious on so many things, tofu being my favorite, and it's very simple to make.

- 14 oz extra firm tofu
- 1 tbsp olive oil
- 1/4 cup low sodium soy sauce
- 1/3 cup low sodium vegetable stock
- 1 tbsp cornstarch
- 3 tbsp maple syrup
- 1 1/2 tsp apple cider vinegar
- 1 tsp garlic powder
- 1/2 tsp ginger
Press the tofu for 15 minutes. Pat off excess moisture, then slice it into 1/2" cubes. Heat the olive oil in a large pan over medium heat. Add the tofu pieces and cook for 5-10 minutes or until done to your liking, flipping and tossing occasionally.
While the tofu is cooking, add all of the remaining ingredients to a mixing bowl and whisk thoroughly.
Lower the heat to medium-low, add the sauce to the tofu and stir to combine. Watching closely, cook for another 3-5 minutes or until the sauce is thick and the tofu is thoroughly coated.
Serve over rice with veggies, green onions, and sesame seeds. Enjoy & share!
