Teriyaki Tofu

This sauce is, in my opinion, better than any store-bought teriyaki sauce! It's delicious on so many things, tofu being my favorite, and it's very simple to make.

Ingredients
  

  • 14 oz extra firm tofu
  • 1 tbsp olive oil
  • 1/4 cup low sodium soy sauce
  • 1/3 cup low sodium vegetable stock
  • 1 tbsp cornstarch
  • 3 tbsp maple syrup
  • 1 1/2 tsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/2 tsp ginger

Instructions
 

  • Press the tofu for 15 minutes. Pat off excess moisture, then slice it into 1/2" cubes.
  • Heat the olive oil in a large pan over medium heat. Add the tofu pieces and cook for 5-10 minutes or until done to your liking, flipping and tossing occasionally.
  • While the tofu is cooking, add all of the remaining ingredients to a mixing bowl and whisk thoroughly.
  • Lower the heat to medium-low, add the sauce to the tofu and stir to combine. Watching closely, cook for another 3-5 minutes or until the sauce is thick and the tofu is thoroughly coated.
  • Serve over rice with veggies, green onions, and sesame seeds. Enjoy & share!
