Tempeh Tacos
These tacos are super easy to make, high protein, and absolutely delicious!

- 8 oz tempeh
- 1 tbsp olive oil
- 1/4 cup low sodium vegetable broth
- 2 tbsp tomato paste
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp oregano
- 1/4 tsp salt
- pinch of black pepper
- toppings: lettuce, taco sauce, guacamole, pickled onions
Heat the olive oil in a saucepan over medium heat.
Crumble the tempeh into the pan. I like to make sure there are many different sized pieces. Cook for 3-4 minutes or until slightly browned.
Add all of the remaining ingredients. Cook for 2-3 minutes or until all the liquid is gone.
