Spicy Peanut Tempeh
I am constantly craving this sauce, and tempeh is my favorite protein to serve it with!

- 8 oz tempeh
- 1/4 cup low sodium vegetable stock
- 2 garlic cloves minced
- 1 tbsp toasted sesame oil
- 1 tbsp sriracha
- 2 tbsp low sodium soy sauce
- 2 tbsp maple syrup
- 2 tbsp peanut butter
- 1 tsp lime juice
Cut the tempeh into small triangles.
Add all of the sauce ingredients to a medium saucepan. Heat over low heat until just combined.
Add the tempeh to the pan & heat over a low simmer for 10 minutes, flipping halfway.
Serve with rice & broccoli. I like to use the extra sauce in the pan as a dip!
