Spicy Peanut Pasta
This recipe is so easy to make, I always have the ingredients on hand, and it's delicious for days.

- 12 oz angel hair pasta
- 4 cloves garlic minced
- 1 tbsp olive oil
- 2/3 cup creamy peanut butter
- 3 tbsp low sodium soy sauce
- 1/3-1 cup hot water
- 1 tbsp apple cider vinegar
- 1 tbsp toasted sesame oil
- 1-2 tbsp sriracha
- 1-2 tbsp maple syrup
- 1/2 tsp red pepper flakes
- chopped peanuts for topping
Cook the noodles according to the al dente instructions.
Sauté the minced garlic in a large skillet with oil until golden brown.
Lower heat, add hot water, then peanut butter. (This is the easiest way to soften the peanut butter)
Add all the remaining sauce ingredients, whisk together, adding more water as needed to get to a thick & smooth texture (pictured).
Taste and add any ingredients as needed.
Add the pasta to the skillet when it's ready.
Add some tofu, veggies, vegan chicken, etc. Top with chopped nuts & enjoy!
