Spicy Cucumber Salad

- 1 english cucumber
- 1 garlic clove minced
- 1/2 tbsp toasted sesame oil
- 1 tsp low sodium soy sauce
- 1 tsp white balsamic vinegar
- 1 tsp sriracha
- sesame seeds for topping
Cut the cucumber into 2 inch blocks. On each of them, make deep, diagonal cuts without cutting through. Repeat on the opposite side.
Combine all remaining ingredients in a small bowl. Taste and adjust flavors as desired.
Pour sauce over the cucumber and top with sesame seeds. Enjoy & share!
