Spicy Cucumber Salad

Ingredients
  

  • 1 english cucumber
  • 1 garlic clove minced
  • 1/2 tbsp toasted sesame oil
  • 1 tsp low sodium soy sauce
  • 1 tsp white balsamic vinegar
  • 1 tsp sriracha
  • sesame seeds for topping

Instructions
 

  • Cut the cucumber into 2 inch blocks. On each of them, make deep, diagonal cuts without cutting through. Repeat on the opposite side.
  • Combine all remaining ingredients in a small bowl. Taste and adjust flavors as desired.
  • Pour sauce over the cucumber and top with sesame seeds. Enjoy & share!
