Ingredients
  

Spice Mix

  • 2 tbsp chili powder
  • 1/2 tbsp cumin
  • 1/2 tbsp oregano
  • 2 tsp red pepper flakes
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp himalayan salt

Chili

  • 1 medium yellow onion
  • 6 cloves garlic
  • 1 cup dry quinoa
  • 15 oz black beans
  • 15 oz kidney beans
  • 15 oz diced tomatoes
  • 6 oz tomato paste
  • 1 large sweet potato
  • 6 cups water

Instructions
 

  • Veggie prep: dice the onion, garlic cloves, and sweet potato.
  • Make your spice mix.
  • Drain & rinse the black beans, kidney beans, and quinoa.
  • Add everything to the slow cooker & stir to combine.
  • Cook on high for 4-6 hours or on low for 6-8 hours.
  • Top with sliced avocado, cilantro, parsley, etc. Enjoy!
