Slow Cooker Sweet Potato Chili

Spice Mix
- 2 tbsp chili powder
- 1/2  tbsp cumin
- 1/2 tbsp oregano
- 2 tsp red pepper flakes
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp himalayan salt
Chili
- 1 medium yellow onion
- 6 cloves garlic
- 1 cup dry quinoa
- 15 oz black beans
- 15  oz kidney beans
- 15 oz diced tomatoes
- 6 oz tomato paste
- 1 large sweet potato
- 6 cups water
- Veggie prep: dice the onion, garlic cloves, and sweet potato. 
- Make your spice mix. 
- Drain & rinse the black beans, kidney beans, and quinoa. 
- Add everything to the slow cooker & stir to combine. 
- Cook on high for 4-6 hours or on low for 6-8 hours. 
- Top with sliced avocado, cilantro, parsley, etc. Enjoy!
