Slow Cooker Lentil Burritos

This recipe is so delicious! It's great for burritos, tacos, and even chip dip!

Ingredients
  

  • 1 1/2 cup green or brown dry lentils
  • 3 cups low sodium vegetable broth
  • 1/2 yellow onion
  • 3 cloves garlic
  • 1 1/4 cup salsa
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 tsp oregano
  • 1 tbso dried parsley
  • 1 tbsp apple cider vinegar
  • 1 tbsp low sodium soy sauce
  • 1 tsp salt
  • tortillas
  • taco/burrito toppings

Instructions
 

  • Pick through and rinse the lentils. Mince the onion and garlic.
  • Add all ingredients to your slow cooker and stir to combine.
  • Cook on high for 4-5 hours or on low for 7-8 hours. It's done when the lentils are tender and most of the liquid has cooked off.
  • Use a slotted spoon to take the filling from the slow cooker. Add to burritos or tacos with more salsa, guacamole, this vegan cheese sauce, lettuce, etc. This mixture is also great as a chip dip and would be a great idea for a shareable appetizer. Enjoy & share!
