Simple Peanut Butter Granola
This granola is a healthy way to add some sweetness and a crunch to so many things!

- 5 cups old fashioned oats
- 1/2 cup agave or maple syrup
- 1/2 cup creamy peanut butter
- 1 1/2 tsp vanilla
Preheat the oven to 275 degrees F/135 degrees C. Line a large baking sheet with parchment paper.
Combine the peanut butter, agave, and vanilla in a microwave-safe bowl.
Microwave for 30-45 seconds, or until the peanut butter starts to melt. Whisk to combine.
In a large bowl, add the overnight oats. Pour the peanut butter mix on top & stir to combine as much as you can.
Spread the oats out on the baking sheet. Bake for 20 minutes, remove from oven, stir, and push down on the oats to flatten them as much as you can. Bake for another 12-15 minutes or until the oats are slightly browned.
Break into small pieces & store in airtight jars. Enjoy!
