Quick Ramen Stir Fry

This is one of my favorite weeknight meals! It's so easy to make and full of fantastic flavors.

Ingredients
  

  • 2 packages of dried ramen noodles toss or save the flavor packets
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp green onion chopped
  • 2 cups frozen mixed vegetables
  • 1/3 cup low sodium vegetable stock
  • 3 tbsp low sodium soy sauce
  • 1 1/2 tbsp molasses
  • 1 1/2 tbsp sriracha
  • 1 1/2 tsp cornstarch

Instructions
 

  • Bring 4 cups of water to a boil. Add the ramen noodles and cook for 1-2 minutes, or until slightly soft and broken up. (The noodles will continue to cook when mixed with the sauce and veggies.) Drain and set aside.
  • Either let the veggies thaw or microwave them in water for 3 minutes, then drain.
  • Combine the vegetable stock, soy sauce, molasses, sriracha, and cornstarch in a small bowl.
  • Heat the olive oil in a large saucepan over medium-low heat. Add the garlic and saute for 1-2 minutes. Add the veggies and green onion, and cook for 5 minutes, stirring frequently.
  • Add the noodles and sauce, stir to combine. Lower the heat and let it cook for another 5 minutes, or until the sauce is thick and the noodles are done to your liking.
  • Top with more green onions and sesame seeds. Enjoy & share!
