Quick Ramen Stir Fry
This is one of my favorite weeknight meals! It's so easy to make and full of fantastic flavors.

- 2 packages of dried ramen noodles toss or save the flavor packets
- 1 tbsp olive oil
- 3 cloves garlic minced
- 2 tbsp green onion chopped
- 2 cups frozen mixed vegetables
- 1/3 cup low sodium vegetable stock
- 3 tbsp low sodium soy sauce
- 1 1/2 tbsp molasses
- 1 1/2 tbsp sriracha
- 1 1/2 tsp cornstarch
Bring 4 cups of water to a boil. Add the ramen noodles and cook for 1-2 minutes, or until slightly soft and broken up. (The noodles will continue to cook when mixed with the sauce and veggies.) Drain and set aside.
Either let the veggies thaw or microwave them in water for 3 minutes, then drain.
Combine the vegetable stock, soy sauce, molasses, sriracha, and cornstarch in a small bowl.
Heat the olive oil in a large saucepan over medium-low heat. Add the garlic and saute for 1-2 minutes. Add the veggies and green onion, and cook for 5 minutes, stirring frequently.
Add the noodles and sauce, stir to combine. Lower the heat and let it cook for another 5 minutes, or until the sauce is thick and the noodles are done to your liking.
Top with more green onions and sesame seeds. Enjoy & share!
