Pickled Onions

- 1/2 medium red onion
- 1 cup white vinegar
- 1 cup water
- 1/4 cup sugar
- 1 tbsp sea salt
- 2 cloves garlic
- 1/2 tsp mixed peppercorns
Slice the onions very thin.
Heat the vinegar and water in a small saucepan for just a few minutes, then add the salt and sugar. Stir until dissolved.
Add the vinegar mixture, onion slices, peppercorn, and whole garlic cloves to your jar. Shake gently.
Let sit overnight and enjoy! Refrigerate after opening.
