Pickled Onions

Ingredients
  

  • 1/2 medium red onion
  • 1 cup white vinegar
  • 1 cup water
  • 1/4 cup sugar
  • 1 tbsp sea salt
  • 2 cloves garlic
  • 1/2 tsp mixed peppercorns

Instructions
 

  • Slice the onions very thin.
  • Heat the vinegar and water in a small saucepan for just a few minutes, then add the salt and sugar. Stir until dissolved.
  • Add the vinegar mixture, onion slices, peppercorn, and whole garlic cloves to your jar. Shake gently.
  • Let sit overnight and enjoy! Refrigerate after opening.
