One Pot Brown Fried Rice
This easy, wonderful, healthy weeknight dinner option is always a big hit in my house!

- 3 cups minute brown rice uncooked
- 3 cups low sodium vegetable stock
- 1 cup frozen green peas
- 1/2 yellow or white onion diced
- 1/2 cup diced carrots
- 4 cloves garlic minced
- 3 tbsp low sodium soy sauce
- 1 tbsp toasted sesame oil
- 1 tbsp sriracha
- optional: 2 tbsp vegan butter
- optional: green onions
Add all of the ingredients, minus the butter and green onions, to a large saute pot and stir to combine.
Bring to a boil, cover, and lower to a simmer. Let simmer for 12-15 minutes or until the water has absorbed and the rice is cooked.
If desired, stir in the butter and green onions, and top with more green onions. Enjoy & share!
