In a small saucepan, melt the butter.
Add the butter, granulated sugar, and brown sugar to a large bowl. Gently whisk together until thick and thoroughly combined.
Add the applesauce and vanilla, stir to combine.
Combine the flour, oats, baking soda, salt, and cinnamon in a medium-sized bowl.
Slowly add the dry ingredients to the large bowl, stopping to stir 2-3 times until a dough is formed and everything is combined. Add the raisins and stir until combined.
Cover the bowl with plastic wrap and refrigerate for 30 minutes.
Preheat your oven to 375 degrees F/190 degrees C. Line two large baking sheets with parchment paper.
Using a large cookie scoop or your hands, scoop out about two tablespoons of dough at a time and place 1-2 inches apart on the baking sheets. Gently press down on each cookie slightly with your palm.
Bake for 10-11 minutes. Remove from the oven, let cool on the baking sheets for 5 minutes, and transfer to cooling racks to cool completely. Enjoy & share!
