Easiest Vegan Cornbread Casserole
I look forward to having this cornbread casserole at my holiday parties all year long! It's so comforting and ridiculously easy to make!

- 1/4 cup liquid JUST egg
- 1 stick vegan butter
- 1 box vegetarian Jiffy corn muffin mix
- 15 oz can of whole-kernel corn
- 15 oz can of creamed corn
Preheat your oven to 375 degrees F.
Combine all of the ingredients in a mixing bowl (do not drain the cans of corn).
Transfer to a lightly greased 7x11-inch casserole dish. Double the recipe if you're using a 9x13.
Bake for 50-55 minutes or until done to your liking.
Serve with chickpea meatloaf. Enjoy & share!
