Creamy Gnocchi Soup

- 1 package (18 oz) Trader Joe’s garden vegetable hash
- 1 large carrot peeled & chopped
- 1 cups low sodium vegetable broth
- 1 package (6 oz) dairy-free Boursin
- 1 package (14 oz) Trader Joe’s pumpkin gnocchi
- coconut milk for garnish
- vegan croutons for garnish
- salt & pepper to taste
Cook the chopped carrot and garden vegetable hash according to the package instructions. Season with salt & pepper.
Transfer the cooked veggies to a blender along with the Boursin and vegetable broth. Blend until smooth.
Transfer this mixture to a pot and bring to a boil. Add the gnocchi and cook for 5-6 minutes or until the gnocchi starts to float. Taste and season with salt & pepper.
Serve with a drizzle of coconut milk and a few croutons (if desired). Enjoy & share!
