Best Cauliflower Tacos

This recipe is fun, creative, delicious and very photogenic!

Ingredients
  

  • 1 1/2 cup flour
  • 1 3/4 cup plant milk plain, unsweetened
  • 1 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp cayenne pepper
  • pinch of sea salt & black pepper
  • 1 1/2 cup panko breadcrumbs
  • 1 medium head of cauliflower

For serving

  • 1/2 cup vegan mayonnaise
  • 2 tbsp sriracha
  • 1 tbsp maple syrup
  • tortillas
  • mashed avocado
  • crushed pistachios
  • microgreens
  • vegan feta cheese
  • pickled onions
  • spicy vegan slaw

Instructions
 

  • Preheat the oven to 400 degrees F/200 degrees C.
  • Chop cauliflower heads into bite-sized pieces.
  • In a medium bowl, combine flour, cumin, garlic powder, cayenne pepper, chili powder, salt & pepper. Add the plant milk, stir to combine.
  • Add the panko bread crumbs to a small bowl.
  • Dip the cauliflower pieces into the milk/flour mixture, wipe off excess, then coat in breadcrumbs.
  • Place coated cauliflower pieces on a baking sheet lined with parchment paper. Bake for 8 minutes, toss and bake for another 8 minutes.
  • In a small bowl, combine the sriracha, maple syrup and mayonnaise.
  • Assemble & enjoy! Combine the cauliflower, sriracha mayo, mashed avocado, crushed pistachios, pickled onionsspicy vegan slaw, microgreens and feta cheese in corn or flour tortillas.
