Best Cauliflower Tacos

- 1 1/2 cup flour
- 1 3/4 cup plant milk plain, unsweetened
- 1 1/2 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp cayenne pepper
- pinch of sea salt & black pepper
- 1 1/2 cup panko breadcrumbs
- 1 medium head of cauliflower
For serving
- 1/2 cup vegan mayonnaise
- 2 tbsp sriracha
- 1 tbsp maple syrup
- tortillas
- mashed avocado
- crushed pistachios
- microgreens
- vegan feta cheese
- pickled onions
- spicy vegan slaw
Preheat the oven to 400 degrees F/200 degrees C.
Chop cauliflower heads into bite-sized pieces.
In a medium bowl, combine flour, cumin, garlic powder, cayenne pepper, chili powder, salt & pepper. Add the plant milk, stir to combine.
Add the panko bread crumbs to a small bowl.
Dip the cauliflower pieces into the milk/flour mixture, wipe off excess, then coat in breadcrumbs.
Place coated cauliflower pieces on a baking sheet lined with parchment paper. Bake for 8 minutes, toss and bake for another 8 minutes.
In a small bowl, combine the sriracha, maple syrup and mayonnaise.
Assemble & enjoy! Combine the cauliflower, sriracha mayo, mashed avocado, crushed pistachios, pickled onions, spicy vegan slaw, microgreens and feta cheese in corn or flour tortillas.
