BBQ Shredded Tofu

Shredded tofu is my favorite new discovery! I may or may not already be obsessed.

Ingredients
  

  • 16 oz super firm tofu
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 2 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 cup bbq sauce
  • 1/4 cup water

Instructions
 

  • Preheat your oven to 350 degrees F/180 degrees C. Line a large baking sheet with parchment paper.
  • Since you're using extra or super firm tofu and it's going in the oven, you don't need to press it. Just drain the water and pat it dry so it's easy to grate.
  • Use the large side of a grater to shred the tofu. Set aside.
  • In a large bowl, combine the soy sauce, olive oil, chili powder, garlic powder and paprika. Add the tofu, gently mix until well coated.
  • Spread the tofu in a thin layer on the pan. Bake for 15 minutes, stir the tofu, and bake for an additional 15 minutes.
  • Mix the barbecue sauce and water together & pour over the tofu. Mix on the pan to combine as much as you can, then return to the oven for another two minutes. This will heat the sauce and give the tofu a meaty texture.
  • Serve in a sandwich with my simple vegan coleslaw, on nachos, in wraps, on baked potatoes, in tacos, etc. Enjoy & share!
