Baked Tofu Nuggets
These nuggets remind me so much of the chicken nuggets I used to get in happy meals as a kid! They're delicious, full of protein, and easy to make.

- 16 oz super firm tofu
- 2 cups clubhouse cracker crumbs
- 1/2 cup all purpose flour
- 1/2 cup plant milk plain, unsweetened
- 1/3 cup water
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp sea salt
- cooking oil spray
Preheat your oven to 450 degrees F/230 degrees C. Line a large baking sheet with parchment paper.
Cut the tofu into 12 nugget-sized pieces. Thoroughly process the crackers in a food processor until there are only crumbs.
Whisk together the milk, water, flour, and spices. Spread the cracker crumbs out on a plate.
Dip the tofu nuggets one at a time into the wet mixture, shake off any excess, then toss in the cracker crumbs to coat. Place on the baking sheet, leaving space between each nugget. Once they are all laid out, spray them with cooking spray, flip, and spray the other side.
Bake for 30 minutes, flipping the nuggets halfway through. Serve immediately with your favorite dips/condiments (try this "honey" mustard). Enjoy!
