Best Vegan Cheese Sauce

This sauce is SO cheesy, and it takes less than 10 minutes to make! What’s not to love?

I can’t begin to try to count how many cheese sauces I’ve attempted to make! Almost all of them include soaking nuts for hours, one of my least favorite things to do when I just want a snack, and all the nutritional yeast in the world wouldn’t give them a satisfying cheesy flavor. I stayed away from the coconut milk recipes for as long as I could because I didn’t want my cheese sauce to taste like coconut. Honestly, I could not have been more wrong! This sauce is exactly what I’ve been searching for – a savory, satisfying, cheesy sauce that takes barely any effort to make! It always comes out delicious and smooth. I mean, look at my Chipotle sofritas bowl! Confession: I took the picture and then added a LOT more of this sauce.

Ingredients:

  • 1 can coconut milk (13.6 ounces)
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 tbsp lemon juice
  • 3/4 cup nutritional yeast
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1/2 tsp paprika
  • salt, to taste

Method:

  • Add the cornstarch and water to a small bowl, mix until combined.
  • Add all the ingredients + the cornstarch mixture to a medium-sized saucepan & whisk.
  • Simmer on medium heat for 5-7 minutes.
  • Taste and adjust seasonings as needed.

That’s right – you don’t have to soak any nuts or use a blender! Just mix, heat it up & enjoy.
