This casserole is layered with great flavors and will always be a staple in my house!
My vegetarian mother heard me say, “Tater tot casserole for dinner tonight,” and she thought to herself, “I wonder if I have a Nancy’s Pizza coupon.” Listen… this is now one of her favorite meals! Hours went by after we finished eating, and she just kept repeating, “That was SO good!” The cream of mushroom adds an incredibly satisfying flavor to the already great impossible meat, the mixed vegetables provide little bursts of sweetness, and you can’t go wrong with topping something with cheese and tater tots! This is a great meal for any night of the week.
Ingredients:
- 1 1/2 lb impossible meat
- 1/2 yellow onion
- 3 garlic cloves
- 1 tbsp soy sauce
- salt & pepper
- 8 oz vegan cream of mushroom
- 3 cups frozen vegetables
- 2 cups vegan shredded cheese
- 3 cups frozen tater tots
The cream of mushroom is so easy to make and can be made ahead of time.
Method:
- Preheat oven to 425 degrees F/220 degrees C.
- Mince the onion & garlic.
- Start browning the impossible meat in a large skillet. Once it has started to brown, add the onion and garlic, and sauté until the meat is cooked through and the onions are translucent.
- Transfer mixture to a 9×13 casserole dish. Add the cream of mushroom and mix until combined. Spread and flatten this mixture so it covers the bottom of the dish.
- Add the frozen veggies, then the cheese, and top with the tater tots. Depending on how well each layer is covered, you may need to use more or less of these.
- Bake for 45-50 minutes or until golden brown and bubbly.
