Vegan Hollandaise Sauce

This is the ultimate vegan hollandaise sauce! It’s almost too easy to make, and it tastes just as good as the egg-based sauce I used to love!

Hollandaise sauce is the perfect middle ground for the savory vs. sweet breakfast debate! Although normally paired with savory sausage and eggs, the sauce itself is slightly sweet, tangy, and oh-so-creamy! It’s commonly egg-based, but this recipe is a simple way to make it just as flavorful and creamy without using eggs or dairy. I could honestly put it on anything, and it is a total crowd pleaser!

Ingredients:

  • 1/2 cup raw, unsalted cashews
  • 1 cup water
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1 tbsp nutritional yeast
  • 1 tsp cornstarch
  • 1/2 tsp onion powder
  • 1/4 tsp turmeric
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • hot sauce, to taste

Method:

  • Soak the cashews for at least 4 hours. If you are low on time, bring them to a boil in a small saucepan, boil for 15 minutes, turn off the heat and let soak for an hour. Drain and rinse.
  • Add all of the ingredients (minus the hot sauce) to a blender and blend until completely smooth.
  • Transfer to a saucepan and heat while whisking for a few minutes, or until it reaches your desired consistency. Add water if it gets too thick.
  • Stir in the hot sauce. Taste and adjust flavors as needed.

Serve over an English muffin topped with vegan egg, sausage, and veggies! Enjoy & share.
