Vegan French Toast

This is my desert island breakfast! (Is that a thing?) It’s sweet with hints of cinnamon and vanilla, perfectly soft and browned, and it’s so easy to make!

I have been trying different french toast recipes for years – this is the ONLY one I love! It’s quite often that I have half a loaf of bread that’s expiring in a day or two, and I just can’t eat that many sandwiches! This is a wonderful way to use it up, and all of the other ingredients are also very common in my house. My mornings are not complete without some Just Egg, and being able to use it for more than just scrambled eggs is a dream come true! I can even make this sweet, soft, perfectly browned french toast.

Ingredients:

  • 8 slices of bread
  • 1 cup liquid Just Egg
  • 1/2 cup non-dairy milk
  • 1 1/2 tsp vanilla
  • 2 tbsp sugar
  • 1 1/2 tsp cinnamon
  • vegan butter for greasing

NOTE:

The best way to prevent soggy or flavorless french toast is to use stale bread. If your bread is not stale, you can either leave it out overnight to dry or bake it. I baked mine at 300 degrees F, 150 degrees C for about 20 minutes. Start with 15 minutes and check if your bread is stiff, and if not, add a few minutes at a time.


Method:

  • Once your bread is ready, whisk together the Just Egg, milk, vanilla, sugar, and cinnamon in a small bowl.
  • Pour this mixture into a wide, shallow dish. Place the bread in the dish in a single layer. Soak for 10 minutes, flip, and soak another 10 minutes.
  • Heat a skillet over medium-low heat and grease with vegan butter.
  • Cook the bread for 2-3 minutes on each side or until done to your liking.
  • Serve with maple syrup and fruit. Enjoy & share!

This is classic french toast and simple recipes at their finest!

Ingredients
  

  • 8 slices of bread
  • 1 cup liquid JUST egg
  • 1/2 cup plant milk
  • 1 1/2 tsp vanilla
  • 2 tbsp sugar
  • 1 1/2 tsp cinnamon
  • vegan butter for greasing

Instructions
 

  • This toast will cook best if your bread is stale or dry (to avoid soggy french toast). If your bread is not stale, either leave out overnight to dry or place the slices in a single layer on a baking sheet and bake for 15-20 minutes at 300 degrees F/150 degrees C.
  • In a small bowl, whisk together the Just Egg, milk, vanilla, sugar, and cinnamon.
  • Pour the mixture into a wide, shallow dish. Place the bread in the dish in a single layer. Soak for 10 minutes, flip and soak another 10 minutes.
  • Heat a skillet over medium-low heat and grease with vegan butter.
  • Cook the bread for 2-3 minutes on each side, or until done to your liking.
