This is one of my favorite Taco(ish) Tuesday meals! The flavors and textures are fantastic, and it’s so easy to customize them to what I’m in the mood for. Taco Bell – take notes!
Taco Bell might’ve been my favorite fast food place before I was vegan! And although they do have some vegan options, my order is always so complicated with removing meat and dairy and adding beans, rice, veggies, etc., it ends up not being a fast food spot for me. Plus, with everything I’m requesting, it’s very easy to get it wrong, and then I have a food waste issue on my hands. What to do? Bring Taco Bell to me! This crunchwrap is fantastic – it has all the flavors and textures of the crunchwraps I used to love, and I can easily make adjustments to it based on what I’m craving that day!
Ingredients:
- 1 large burrito tortilla
- 1 tostada shell
- 4 oz (1/4 lb) impossible meat
- vegan shredded cheese
- vegan sour cream
- 1/2 jalapeno
- 1/4 tomato
- lettuce
- optional: avocado/guacamole, taco sauce
Method:
- In a small skillet, brown the impossible meat. Dice the jalapeno and tomato.
- In the center of the tortilla, add the cheese, lettuce, jalapeno, tomato, sour cream, and impossible meat. In no particular order!
- Top with the tostada shell. Fold the burrito tortilla in over the shell, one fold at a time in a clockwise motion until it is all folded in.
- Starting with the folded side, cook each side in a skillet over medium heat until done to your liking.
Dip in guacamole and/or taco sauce, enjoy & share!
Vegan Crunchwrap
