This 30-minute meal is a comfort food gem! It tastes just like the hamburger helper I loved years ago, only it’s plant based, which makes it a million times better!
I am constantly searching for recipes that meet the following criteria: 30 minutes or less, one pot, comforting, crowd pleasing, and doesn’t break the bank. This recipe meets every single one of those! Hamburger helper is something I loved with all of my heart when I was a kid, but I never expected to enjoy it as an adult. I was VERY wrong! This dish is delicious and comforting, and I’d even describe it as sophisticated because of its amazing flavor profile. And, as I said, it’s a 30-minute one-pot meal, so I might end up making it once a month for the rest of my life. YUM!
Ingredients:
- 8 oz small pasta
- 12 oz vegan ground meat
- 4 cups low sodium vegetable broth
- 1 small onion, minced
- 3 tbsp tomato paste
- 1 tsp garlic powder
- 1/2 tsp chili powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 cups vegan shredded cheddar cheese
Method:
- Add the vegan meat and minced onion to a soup pot. Brown over low-medium heat until the meat is cooked through.
- Add the tomato paste & all spices, and stir to combine.
- Add the veggie broth. Bring to a boil, then add the pasta. Lower the heat to a fast simmer & cook for 12-14 minutes or until the pasta is tender and almost all of the liquid is gone.
- Remove from heat & stir in the vegan cheese. Depending on which brand of vegan cheese you use, you might want to put a lid on the pot for a minute or two to help it melt.

Vegan Cheesy Hamburger Helper
