These tacos are sweet, spicy, savory, packed with protein, and so easy to make!

These tacos are the result of me throwing together some of my favorite things and making myself a delicious and healthy new breakfast favorite! I recently gave tofu scramble a try at home for the first time and was so happy that I immediately wanted to find more excuses to make it. This is my favorite so far – the ultimate breakfast tacos!
Ingredients:
- 6 taco shells/tortillas
- vegan cheese sauce
- tofu scramble
- 1 large sweet potato
- 1 avocado
- salsa
- hot sauce

Method:
- Wash, peel, and dice the sweet potato. Pan fry in light oil or water for about 10 minutes or until soft.

- Assemble your tacos! Top your tortillas with the cheese sauce, tofu scramble, sweet potatoes, salsa, hot sauce, and avocado. Enjoy!

Vegan Sweet Potato Breakfast Tacos
These are the BEST breakfast tacos!! Whenever I make anything that goes in them, I make sure to have enough leftovers to make these tacos.
Ingredients
- 6 taco shells/tortillas
- vegan cheese sauce
- tofu scramble
- 1 large sweet potato
- 1 avocado
- salsa
- hot sauce
Instructions
