Vegan Breaded Green Beans

These green beans have the most delightful flavor and crunch, and I already can’t wait to make them again!

Green beans were my least favorite vegetable until I tried the crispy green bean appetizer at one of my favorite restaurants. It turns out all these little strips of blah need is some crunch to make them shine! I get that same appetizer every single time, and this recipe is the next best thing. It’s easy to make, I always have the ingredients on hand, and it goes so well with all my favorite dipping sauces!

Ingredients:

  • 1 pound green beans
  • 1 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup flour
  • 3 flax eggs (3 tbsp ground flaxseed + 9 tbsp water)
  • 3 tbsp plant milk

Flax eggs are fantastic when you need the stickiness of chicken eggs. To make three, combine 3 tbsp of ground flaxseed with 9 tbsp of water (or about 1/2 cup + 1 tbsp). Let this sit until it thickens.


Method:

  • Preheat your oven to 425 degrees F/220 degrees C, and line a baking sheet with parchment paper.
  • Trim the ends of the green beans.
  • You will need three bowls wide enough to dip the green beans in. In one bowl, combine the flax eggs, plant milk, salt, and pepper. In the second, combine the breadcrumbs and olive oil. In the third bowl, add the flour.
  • Dip the green beans in each bowl in this order: eggs, flour, eggs, breadcrumbs. Place the beans in a single layer on the baking sheet. If the flax eggs begin to dry out, add a little more milk and stir.
  • Bake for 20-25 minutes, or until the beans are golden brown (or to your liking). Dip in your favorite sauce, enjoy & share!
