Two Ingredient Pumpkin Spice Muffins

Yes — this recipe is just as easy and delicious as it sounds!

Finding hidden vegan gems like this always feels like such a victory! These muffins should be called “these don’t taste vegan.”

Plus, only TWO common ingredients?! Yes, please!

Ingredients:

  • 1 can of pumpkin
  • 1 box of spice cake mix

Method:

  • Preheat your oven to 325 degrees F/165 degrees C.
  • Mix the two ingredients together in a bowl until just combined.
  • Scoop into a lined or greased muffin pan. OPTIONAL: I like to sprinkle a little bit of brown sugar on top of each muffin before baking!
  • Bake for 22-25 minutes or until a toothpick comes out clean.
  • That’s it! These are perfect for breakfast, a mid-afternoon snack, and even dessert. YUM!
