The *Best* Cauliflower Tacos

How can I get Taco Bell to start selling these?

As a person who used to hate cooking, I realize that my love for the kitchen began to grow once I felt comfortable enough to start getting creative with recipes. I had never cooked with cauliflower before going vegan, and now I can’t live without them! It’s so easy to be creative and try new combinations and flavors with cauliflower as the centerpiece. This recipe is the perfect example!


Cauliflower Ingredients:

  • -1 1/2 cup flour
  • 1 3/4 cup non-dairy milk
  • 1 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp cayenne pepper
  • pinch of sea salt & pepper
  • 1 1/2 cup panko bread crumbs
  • 1 medium or 2 small heads cauliflower

For serving:


Method:

  • Preheat the oven to 400 degrees F/200 degrees C.
  • Chop cauliflower heads into bite-sized pieces. And by chop, I mean rip them apart! Maybe I just don’t know how to do it right, but cauliflower gets way too messy if I use a knife, so I just tear them apart.
  • In a medium bowl, combine flour, cumin, garlic powder, cayenne pepper, chili powder, salt & pepper. Add the plant milk, stir to combine. Add the panko bread crumbs to a small bowl.
  • Dip the cauliflower pieces into the milk/flour mixture, wipe off excess, then coat in breadcrumbs.
  • Place coated cauliflower pieces on a baking sheet lined with parchment paper. Bake for 8 minutes, toss and bake for another 8 minutes.
  • In a small bowl, combine the sriracha, maple syrup and mayonnaise.
  • Assemble & enjoy! Combine the cauliflower, sriracha mayo, mashed avocado, crushed pistachios, pickled onions, spicy vegan slaw, microgreens and feta cheese in corn or flour tortillas. These tacos are LOADED!
