Spicy Peanut Tempeh

This 20-minute recipe is easily one of my favorite weeknight meals of all time! The sauce is addictive, and the tempeh is its perfect match!

Lately, I have been trying to add more tempeh to my diet because of its high protein and low calorie content. Of course, this flavor combination popped into my head almost immediately – who doesn’t love a spicy peanut sauce?! Tempeh takes on any flavor you want it to, just like tofu, and this recipe is no exception. It’s sweet, spicy, nutty, and well rounded with just a little bit of toasted sesame oil. YUM! I finished this batch last night, and I already want to make it again!

Ingredients:

  • 8 oz tempeh
  • 1/4 cup low sodium vegetable stock
  • 2 cloves garlic, minced
  • 1 tbsp toasted sesame oil
  • 1 tbsp sriracha
  • 2 tbsp low sodium soy sauce
  • 2 tbsp maple syrup
  • 2 tbsp peanut butter
  • 1 tsp lime juice

Method:

  • Cut the tempeh into small triangles.
  • Add all of the sauce ingredients to a medium saucepan. Heat over low heat until just combined.
  • Add the tempeh to the pan & heat over a low simmer for 10 minutes, flipping halfway.
  • Serve with rice & broccoli. I like to use the extra sauce in the pan as a dip!
