Simple Vegan Dump Cake

This is my favorite thing to make when I have a sweet tooth but don’t feel like making a complicated recipe!

This cake is the perfect combination of sweet & citrusy, and soft with a bite! Plus, it takes no effort to make, and you won’t have a big kitchen mess to clean up. I make this when I want some dessert, but I don’t want to get 10+ ingredients and dishes out. Oh, and once when we realized we forgot to get/make a birthday cake at 7 PM. (Sorry, Mom!)

Ingredients:

  • 1 can crushed pineapple
  • 1 can cherry pie filling
  • 1 box yellow cake mix
  • 1 cup vegan butter
  • 2 cups shredded coconut
  • optional: 2 cups pecan pieces

Method:

  • Preheat your oven to 350 degrees F/177 degrees C, and lightly grease a 9×13 baking pan. Completely melt the butter.
  • Add the pineapple to the pan first and spread it out.
  • Add the cherry pie filling and spread it out.
  • Add the yellow cake mix and completely cover the fruit.
  • Add the melted butter, making sure all of the cake mix is completely covered. If there are spots that are dry, they won’t cook properly.
  • Add the coconut, spread it out, and add the pecans if using.
  • Bake for 50 minutes, until the sides are bubbly and the top is slightly browned. Cool for 30 minutes before slicing.

Ingredients
  

  • 20 oz crushed pineapple (one can)
  • 21 oz cherry pie filling (one can)
  • 1 box of yellow cake mix
  • 2 cusp shredded coconut
  • 2 cups pecan pieces (optional)
  • 1 cup vegan butter

Instructions
 

  • Preheat oven to 350 degrees F/177 degrees C. Lightly grease a 9×13 baking pan.
  • Melt the butter.
  • Add the pineapple to the pan & spread it out.
  • Add the cherry pie filling & spread it out.
  • Add the yellow cake mix and cover the fruit completely.
  • Add the melted butter onto the cake mix and cover it as much as you can. It won't cook right in the spots the butter isn't touching the cake mix!
  • Add the coconut (and pecans, if used) and spread it out.
  • Bake for 50 minutes, until the sides are bubbly and the top is slightly browned.
  • Cool for 30 minutes before slicing. Enjoy & share!
