This is one of my favorite desserts! It’s fun, unique, and so simple.
In my opinion, cake pops are grossly underrated! They are the perfect little serving of sweetness – not too much, not too little. They’re easily customizable, and who doesn’t love food on a stick? Before discovering this recipe, I hadn’t had a cake pop in over three years! I used to get the Starbucks cake pops all the time before I was vegan, and I haven’t been able to find a vegan version anywhere. This recipe is so easy to make, it’s a fun project, and the result is phenomenal! Plus, it’s very economical and only includes ingredients that I always have on hand.
Ingredients:
- 1 box cake mix
- 1 cup unsweetened apple sauce
- 1 cup plant milk
- 3 tbsp frosting
- 12 oz chocolate
- sprinkles and/or rice crispies
NOTE:
Make sure to double-check that the chocolate, cake mix, and frosting are all vegan. The flavors are up to you!
Method:
- Combine the cake mix, apple sauce, and plant milk in a medium-sized bowl.
- Pour into a lightly greased 9×13 cake pan, and cook according to the box instructions.
- Remove from oven and let cool for 30-35 minutes.
- Use your hands to crumble the cake apart in the pan. Add the frosting to the cake and combine as much as you can.
- Form a ball with the cake. If it sticks, you’ve used enough frosting. If not, add a little more, combine & try again.
- Form balls as big or small as you want your cake pops to be until you are out of cake.
- Melt your chocolate in a small saucepan. Line a large baking sheet with parchment paper.
- Dip each ball into the chocolate, coating completely, remove with a fork, and place on the baking sheet. Add your desired toppings to each cake ball.
- Refrigerate until the chocolate has hardened. Enjoy & share!

- 12 oz chocolate vegan
