Simple Peanut Butter Granola

This granola makes so many boring breakfasts shine!

I was never a fan of vegan yogurt until I started adding granola! Now it’s a breakfast staple in my house, and I always have a jar of granola in the cabinet. It’s the perfect addition – it adds flavor, texture, crunch, and protein! Plus, this recipe has only four ingredients and is effortless to make. I used to buy bags of granola, but making my own is much cheaper, more resourceful, and eco-friendly. Give it a try!

Ingredients:

  • 5 cups old fashioned oats
  • 1/2 cup agave
  • 1/2 cup creamy peanut butter
  • 1 1/2 tsp vanilla

Method:

  • Preheat your oven to 275 degrees F/135 degrees C. Line a large baking sheet with parchment paper.
  • Combine the peanut butter, agave, and vanilla in a microwave-safe bowl. Microwave for 30-45 seconds or until the peanut butter starts to melt. Whisk to combine.
  • TASTE IT! It tastes just like a fluffernutter to me… my favorite sandwich when I was a kid!
  • If you haven’t devoured the whole bowl, pour it over the oats in a large mixing bowl. Stir to combine as much as you can. Spread the oats in an even layer on the baking sheet.
  • Bake for 20 minutes, remove from the oven, stir, and push down on the oats to flatten them as much as you can.
  • Bake for an additional 12-15 minutes or until the oats are slightly browned.
  • Break into small pieces & store in airtight jars. That’s it! Enjoy over yogurt, smoothie bowls, puddings, etc. Enjoy & share!
