This granola makes so many boring breakfasts shine!
I was never a fan of vegan yogurt until I started adding granola! Now it’s a breakfast staple in my house, and I always have a jar of granola in the cabinet. It’s the perfect addition – it adds flavor, texture, crunch, and protein! Plus, this recipe has only four ingredients and is effortless to make. I used to buy bags of granola, but making my own is much cheaper, more resourceful, and eco-friendly. Give it a try!
Ingredients:
- 5 cups old fashioned oats
- 1/2 cup agave
- 1/2 cup creamy peanut butter
- 1 1/2 tsp vanilla
Method:
- Preheat your oven to 275 degrees F/135 degrees C. Line a large baking sheet with parchment paper.
- Combine the peanut butter, agave, and vanilla in a microwave-safe bowl. Microwave for 30-45 seconds or until the peanut butter starts to melt. Whisk to combine.
- TASTE IT! It tastes just like a fluffernutter to me… my favorite sandwich when I was a kid!
- If you haven’t devoured the whole bowl, pour it over the oats in a large mixing bowl. Stir to combine as much as you can. Spread the oats in an even layer on the baking sheet.
- Bake for 20 minutes, remove from the oven, stir, and push down on the oats to flatten them as much as you can.
- Bake for an additional 12-15 minutes or until the oats are slightly browned.
- Break into small pieces & store in airtight jars. That’s it! Enjoy over yogurt, smoothie bowls, puddings, etc. Enjoy & share!
Simple Peanut Butter Granola
Ingredients
- 5 cups old fashioned oats
- 1/2 cup agave or maple syrup
- 1/2 cup creamy peanut butter
- 1 1/2 tsp vanilla
Instructions
- Preheat the oven to 275 degrees F/135 degrees C. Line a large baking sheet with parchment paper.
- Combine the peanut butter, agave, and vanilla in a microwave-safe bowl.
- Microwave for 30-45 seconds, or until the peanut butter starts to melt. Whisk to combine.
- In a large bowl, add the overnight oats. Pour the peanut butter mix on top & stir to combine as much as you can.
- Spread the oats out on the baking sheet. Bake for 20 minutes, remove from oven, stir, and push down on the oats to flatten them as much as you can. Bake for another 12-15 minutes or until the oats are slightly browned.
- Break into small pieces & store in airtight jars. Enjoy!
