This is my favorite way to eat asparagus! It comes out perfectly tender and salty every time, the process is as simple as can be, and in my house, there is usually a baked potato in the oven with it!
Roasting asparagus was my gateway to wanting to do a little extra work and roast my veggies instead of always microwaving a bag of frozen! This was also my gateway to enjoying asparagus by itself – I can’t stand it if it’s tough or flavorless! Roasting it this way gives it a soft yet firm tenderness, and the flavor is satisfying and complements so many dinner dishes perfectly. Especially potatoes… whenever I make potatoes, I alternate between air fryer broccoli and roasted asparagus for my side! Plus, asparagus has great health benefits and is very low in calories.
Ingredients:
- 1 bunch of asparagus
- 2 tbsp olive oil
- 1/4 tsp sea salt
- 1/4 tsp ground black pepper
Method:
- Preheat oven to 400 degrees F/200 degrees C. Line a baking sheet with parchment paper
- Cut the tough ends off of the asparagus.
- Drizzle the olive oil, salt, and pepper over the asparagus and toss until fully coated.
- Optional: add garlic, sriracha, vegan parmesan cheese, or anything else to add flavor.
- Lay the asparagus out on the baking sheet in a single layer. Bake for 10 minutes, turn the pieces, and bake for another 5-7 minutes.
- Serve with my air fryer baked potatoes. Enjoy & share!
