Quick Ramen Stir Fry

Get ready to knock one of your favorite recipes out of its top 10 spot – this stir fry is full of delicious flavors, and it might be the cheapest entrée on this website!

This recipe is always there when I need it! When I don’t want to go out to eat, I don’t have much time to cook, I’m low on groceries, or I’m just feeling lazy. Oh, and when I’m craving it – the sauce is SO good! It’s spicy, sweet, smoky, rich, and healthy. Most of the time, I have all of the ingredients on hand, but if I don’t, it’s just a matter of a quick trip to any grocery store with less than $20 in my pocket. That’s why this recipe has been a weeknight go-to for years, and I’ll never go more than a month without making it!

Ingredients:

  • 2 packages of dried ramen noodles (toss or save the flavor packets)
  • 1 tbsp olive oil
  • 3 cloves of garlic, minced
  • 2 tbsp chopped green onion
  • 2 cups frozen mixed vegetables
  • 1/3 cup low sodium vegetable stock
  • 3 tbsp low sodium soy sauce
  • 1 1/2 tbsp molasses
  • 1 1/2 tbsp sriracha
  • 1 1/2 tsp cornstarch

Method:

  • Bring 4 cups of water to a boil. Add the ramen noodles and cook for 1-2 minutes, or until slightly soft and broken up. (The noodles will continue to cook when mixed with the sauce and veggies.) Drain and set aside.
  • Either let the veggies thaw or microwave them in water for 3 minutes, then drain.
  • In a small bowl, combine the vegetable stock, soy sauce, molasses, sriracha, and cornstarch.
  • Heat the olive oil in a large saucepan over medium-low heat. Add the garlic and sauté for 1-2 minutes. Add the veggies and green onion, and cook for 5 minutes, stirring frequently.
  • Add the noodles and sauce, stir to combine. Lower the heat and let it cook for another 5 minutes, or until the sauce is thick and the noodles are done to your liking.

Top with more green onions and sesame seeds. Enjoy & share!
