Peanut Butter Oat Bars

These protein-packed bars are great for meal-prepping! They take no effort to make, and they’re the perfect pick-me-up!

I used to live on granola bars, basically! I always had them for breakfast, and I had at least three on me or in my car at all times. Now, it’s tough to find granola bars that are free from honey and high fructose corn syrup. So I make my own! These are super easy to make – I throw a batch together on Sundays and enjoy them all week. They’re high in protein and delicious!

Ingredients:

  • 2/3 cup creamy peanut butter
  • 1/3 cup maple syrup
  • 1/4 cup vegan protein powder
  • 1 2/3 cup old-fashioned oats
  • 1/2 cup dried cranberries

Method:

  • Whisk the peanut butter & maple syrup together in a large bowl.
  • Add the remaining ingredients & stir to combine.
  • Lay the mixture in a 7×11-inch baking dish & pat down evenly.
  • Refrigerate for 20 minutes before slicing.
  • Enjoy & share!
