This is one of my favorite recipes! It’s perfect for busy mornings (skip breakfast? No, thank you!) and is SO easy to make.
Chia seeds were never in my diet before I was vegan. I didn’t know what to do with them! But it turns out.. they’re kind of magic.
Chia seeds are FILLED with nutrition – fiber, protein, omega-3s – and they’re easy to integrate into any diet. How does pudding for breakfast sound?
Ingredients:
- 4 tablespoons chia seeds
- 1 cup plant milk
- 1 teaspoon vanilla
- 1/2 tablespoon maple syrup
Method:
- Add all the ingredients to a 12 oz mason jar.
- Shake it up! Make sure nothing is stuck to the bottom.
- Refrigerate the jar for about 30 minutes to start the soaking process. It will still be thin, but the seeds may have settled, so shake it up again to make sure they are evenly distributed.
- Refrigerate it overnight, and breakfast is served! Top with fresh fruit for some added flavor & nutrition.
Overnight Chia Seed Pudding
This pudding is simple, nutritious & perfect for busy mornings.
Ingredients
- 4 tbsp chia seeds
- 1 cup plant milk
- 1 tsp vanilla
- 1/2 tbsp maple syrup
Instructions
- Combine all ingredients in a 12 oz jar.
- Shake, refrigerate for about 30 minutes, shake again.
- Leave in refrigerator overnight to set.
- Enjoy & share!
