Lemon Pepper Cauliflower Wings

This is a dish I could eat every single day, and I’d never get tired of it!

Whoever first came up with and shared the concept of cauliflower wings… thank you. SO MUCH. Barbecue & buffalo cauliflower wings have been in my regular dinner rotation for years, and I recently branched out to lemon pepper. YUM! This sauce is so easy to make, and the flavor is magnificent.

Cauliflower Ingredients:

  • 1 small-medium head of cauliflower
  • 3/4 cup flour of choice
  • 1 cup plant milk of choice, unsweetened
  • 1 tablespoon lemon pepper seasoning
  • 1 1/2 cup panko breadcrumbs

Sauce Ingredients:

  • 8 tablespoons lemon juice
  • 4 1/2 tablespoons maple syrup
  • 1 teaspoon pepper
  • 1 teaspoon fresh lemon zest
  • 1 teaspoon water
  • 1 teaspoon cornstarch

This can easily be called a vegan Buffalo Wild Wings copycat recipe! It’s delicious, unique & definitely a crowd-pleaser. Plus, in my house, anything that includes ten or fewer ingredients is worth trying!

Method:

  • Preheat the oven to 450 degrees F/230 degrees C. Line a baking sheet with greased foil or a silicone baking sheet.
  • Chop the cauliflower florets into wing-like pieces or smaller. I like to have a few bite-sized pieces. We will not be using the stems or leaves in this recipe, just the florets.
  • Whisk together the plant milk, flour & lemon pepper seasoning in a large bowl. This will be the batter.
  • Toss the cauliflower in the batter, making sure every piece is well coated.
  • In a smaller bowl, add the breadcrumbs. Toss in the cauliflower, about 1/3 of the batch at a time so it’s easy to see when all of the wings have been coated.
  • Lay the cauliflower out on the baking sheet & bake for 20 minutes.
  • Meanwhile, mix together the water and cornstarch, then combine this and the remaining sauce ingredients in a small saucepan. Whisk & heat over low heat.
  • When the 20 minutes are up, toss the sauce and cauliflower together. Lay the wings back on the baking sheet & bake for another 5 minutes.
  • Remove from oven, garnish with lemon zest & chopped parsley. Serve over rice. Enjoy & share!

Ingredients
  

  • 1 small head of cauliflower

  • 1 tbsp lemon pepper seasoning
  • 1 1/2 cup panko breadcrumbs

Sauce

  • 8 tbsp lemon juice
  • 4 1/2 tbsp maple syrup
  • 1 tsp black pepper
  • 1 tsp fresh lemon zest
  • 1 tsp water
  • 1 tsp cornstarch

Instructions
 

  • Preheat oven to 450 degrees F/230 degrees C.
  • Line a baking sheet with greased foil (or a silicone baking sheet).
  • Chop the cauliflower into florets that resemble the size of wings or smaller.
  • In a large bowl, whisk together the flour, plant milk and lemon pepper seasoning.
  • Add the cauliflower to the bowl & stir until all the florets are fully coated in batter.
  • Put the breadcrumbs in a smaller bowl, and add the cauliflower about 1/3 of the batch at a time, making sure they are all fully coated in breadcrumbs.
  • Spread the wings out on the baking sheet & bake for 20 minutes.
  • Meanwhile, mix together the water and cornstarch, then combine this and the rest of the sauce ingredients in a small saucepan and whisk over low heat.
  • Toss the wings in the sauce & bake for another 5 minutes.
  • Remove from oven & garnish with lemon zest and parsley flakes. Serve over rice. Enjoy & share!
