Greek Style Braised Green Beans

I can’t get enough of this one-pot, one-hour, foolproof recipe!

I grew up never liking green beans – even in frozen bags of mixed veggies I always ate around the green beans! I’m still not the biggest fan of them plain, but if they’re dressed up in delicious tomato sauce like this, they become one of my favorite veggies! This is a one-pot recipe that is as simple as can be, and it’s a total crowd pleaser. It’s great as a side for so many dishes, and it’s one of my favorite shareable appetizers. Plus, it’s full of nutrition!

Ingredients:

  • 1 lb green beans
  • 1 28-oz can of diced tomatoes
  • 1 medium onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1/4 tsp red pepper flakes
  • 1 tbsp oregano
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper

Method:

  • Chop the ends off the green beans, then cut them into bite-sized pieces. Mince the onion and garlic.
  • Heat the olive oil in a large saute pan. Add the onion and cook for 4-5 minutes or until translucent and fragrant. Add the garlic and cook for another minute.
  • Add all of the remaining ingredients and stir to combine. Cover and cook for 50-60 minutes or until the green beans are soft and done to your liking, stirring occasionally.
  • Enjoy & share!
