My mom tells me not to make these because they’re a little too irresistible!
Oatmeal raisin cookies don’t get enough credit. They’re just as sweet & delicious as chocolate chip cookies, but somehow I don’t feel guilty having them for breakfast! This recipe is by far my favorite – I could eat these one after another like a bag of chips.
My only stand mixer is very heavy and difficult to clean, so I like to avoid it when I can. These cookies come out perfectly every time, and I never use a mixer! I’ll admit to laziness as long as the finished product is delicious 😊.
Ingredients:
- 3/4 cup (1 1/2 sticks) vegan butter
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1/3 cup unsweetened apple sauce
- 2 tsp vanilla extract
- 2 1/4 cup old fashioned oats
- 1 1/2 cup flour
- 1 1/2 tsp baking soda
- 3/4 tsp cinnamon
- 1 tsp salt
- 1 1/4 cup raisins
Method:
- In a small saucepan, melt the butter.
- Add the butter, granulated sugar, and brown sugar to a large bowl. Gently whisk together until thick and thoroughly combined.
- Add the applesauce and vanilla, stir to combine.
- Combine the flour, oats, baking soda, salt, and cinnamon in a medium-sized bowl.
- Slowly add the dry ingredients to the large bowl, stopping to stir 2-3 times until a dough is formed and everything is combined. Add the raisins and stir until combined.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes.
- Preheat your oven to 375 degrees F/190 degrees C. Line two large baking sheets with parchment paper.
- Using a large cookie scoop or your hands, scoop out about two tablespoons of dough at a time and place 1-2 inches apart on the baking sheets. Gently press down on each cookie slightly with your palm.
- Bake for 10-11 minutes. Remove from the oven, let cool on the baking sheets for 5 minutes, and transfer to cooling racks to cool completely. Enjoy & share!
