This is by far my favorite pasta recipe! It’s sweet, spicy, nutty, delicious & SO easy to make.
I think I make this recipe every other week, if not more. It’s the perfect option for when I want a home-cooked meal, but I either don’t have a lot of time, I haven’t gone shopping in a while, or I’m just not up for a big project! Plus, it’s delicious and always a crowd-pleaser.
Ingredients:
- 12 ounces of your favorite noodles
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 2/3 cup creamy peanut butter
- 3 tbsp soy sauce
- 1/3 – 1 cup hot water
- 1 tbsp apple cider vinegar
- 1 tbsp sesame oil
- 1-2 tbsp sriracha
- 1-2 tbsp maple syrup
- 1/2 tsp red pepper flakes
- chopped peanuts for topping
Method:
- This recipe would be great with any pasta, but I prefer angel hair or vermicelli. Cook your pasta to the al dente instructions while you make your sauce.
- Sauté the garlic cloves over low-medium heat. Add the hot water, and immediately follow with the peanut butter. This is the easiest way to soften the peanut butter.
- Add all the remaining sauce ingredients to the pan & whisk. Let simmer or add water in order to get to a thick, smooth texture. Taste & adjust flavor as needed.
- Add the noodles to the pan when they’re ready. I love to add some tofu or veggies to this, and I always chop up some peanuts for the topping! It adds great texture & flavor.
- Enjoy & share! The leftovers are great for a week, hot or cold.
Spicy Peanut Pasta
Ingredients
- 12 oz angel hair pasta
- 4 cloves garlic minced
- 1 tbsp olive oil
- 2/3 cup creamy peanut butter
- 3 tbsp low sodium soy sauce
- 1/3-1 cup hot water
- 1 tbsp apple cider vinegar
- 1 tbsp toasted sesame oil
- 1-2 tbsp sriracha
- 1-2 tbsp maple syrup
- 1/2 tsp red pepper flakes
- chopped peanuts for topping
Instructions
- Cook the noodles according to the al dente instructions.
- Sauté the minced garlic in a large skillet with oil until golden brown.
- Lower heat, add hot water, then peanut butter. (This is the easiest way to soften the peanut butter)
- Add all the remaining sauce ingredients, whisk together, adding more water as needed to get to a thick & smooth texture (pictured).
- Taste and add any ingredients as needed.
- Add the pasta to the skillet when it's ready.
- Add some tofu, veggies, vegan chicken, etc. Top with chopped nuts & enjoy!
