Pasta salad is one of my favorite dishes to make! At my house, it either signifies a nice summer day or a week of easy, grab-and-go lunches. It’s a classic must-have at my summertime family gatherings, and cold pasta is in my rotation of Sunday meal prep ideas! This is the dressing recipe I’m currently obsessed with – the stars of the show are lemon juice and tahini, making a creamy, refreshing, delicious flavor perfect for a sunny day.
Dressing Ingredients:
- 1/4 cup tahini
- 1/3 cup plain vegan yogurt
- 1 tbsp dijon mustard
- 1 tbsp apple cider vinegar
- 1 1/2 tbsp lemon juice
- 1 1/2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1/2 tsp dried dill
- 1/2 tsp cayenne pepper
- 1/4 tsp salt
- 1/4 tsp ground black pepper
Other:
- 12 oz small pasta of choice
- sliced cucumber
- halved/quartered cherry tomatoes
Method:
- Cook the pasta according to the instructions on the box. Strain and rinse with cold water.
- Combine all dressing ingredients in a small mixing bowl and whisk. It will be thick, so add about 1 tbsp of water at a time until it reaches your desired consistency.
- Taste and adjust flavors as needed.
- Add the dressing to the rinsed pasta and stir to combine. Add tomatoes, cucumbers, more ground black pepper, and anything else you want.
- Serve immediately or refrigerate for 2+ hours. Enjoy & share!
