Creamy Gnocchi Soup

This soup is just about as comforting as it gets!

Baby, it’s cold outside! It’s the time of year when every time I open TikTok I see 12 new soup recipes I want to try. This one is currently my favorite – inspired by sweet simple vegan, a delicious and simple creamy gnocchi soup! All of these ingredients were purchased at Trader Joe’s (heaven), and this recipe only takes about 30 minutes to make. Music to my ears!

Ingredients:

  • 1 package (18 oz) Trader Joe’s garden vegetable hash
  • 1 large carrot, peeled and chopped
  • 2 cups low-sodium vegetable broth
  • 1 package (6 oz) dairy-free Boursin
  • 1 package (14 oz) Trader Joe’s pumpkin gnocchi
  • coconut milk, for garnish
  • vegan croutons, for garnish
  • salt & pepper

Method:

  • Cook the chopped carrot and garden vegetable hash according to the package instructions. Season with salt & pepper.
  • Transfer the cooked veggies to a blender along with the Boursin and vegetable broth. Blend until smooth.
  • Transfer this mixture to a pot and bring to a boil. Add the gnocchi and cook for 5-6 minutes or until the gnocchi starts to float. Taste and season with salt & pepper.
  • Serve with a drizzle of coconut milk and a few croutons (if desired). Enjoy & share!
