Cookie Dough Protein Treats

These protein snacks are so easy to make, and the flavor is hard to beat! They’re great for breakfast, post-workout snacks, afternoon energy boosts, and even dessert.

If you’ve seen any of my other breakfast posts, you’d know I only have time for breakfast on the weekends, and whatever I’m eating during the week needs to be quick! Also, I never skip breakfast. With all of that being true, and knowing I’m not the only one, I am constantly on the hunt for fast breakfast options to try and share! Oh, and I’m also a big fan of sweet breakfasts. Are you starting to understand why I love this recipe?! These protein treats are packed full of protein from chickpeas, nut butter, and protein powder, and they’re deliciously sweetened with maple syrup, cinnamon, and chocolate chips! It only takes about 15 minutes to make a batch of 16 treats, and you’ve got breakfast and healthy snacks all week long!

Ingredients:

  • 1 15 oz can chickpeas, drained and rinsed
  • 1/2 cup nut butter
  • 2 1/2 tbsp pure maple syrup
  • 1/4 cup vanilla vegan protein powder
  • 2 tsp cinnamon
  • 1/3 cup vegan mini chocolate chips

Method:

  • Add the chickpeas, nut butter, maple syrup, protein powder, and cinnamon to a mixing bowl and stir to gently combine.
  • Using a potato masher or your hands, mash and mix the ingredients as best as possible.
  • Fold in the chocolate chips.
  • Roll into balls and refrigerate for at least one hour, preferably overnight.
  • Serve for breakfast or as a healthy snack. Enjoy & share!
